The dried Apricot cupcake recipe

Apricot cupcake is a breakfast muffin recipe made with dried apricots, all-purpose flour and usually served with honey or maple syrup topping and coffee. The recipe is available with stepwise pictures and a video.

Today let us see another delicious breakfast muffin, the Apricot cupcake which is considered healthy because of the beautiful nutrients the Apricots possess.

For instance, they have got a good amount of antioxidants and also very high in potassium. Also, Apricots help with good eye health and gut health. Moreover, they promote good skincare as they are very much hydrated. In addition, apricots are an excellent source of vitamin A.

Apricot cupcake | Dried apricot muffin recipe

Ingredients
  

Ingredients:

  • ¼ cup butter room temperature
  • ¼ cup sugar granulated
  • or
  • ½ cup powdered sugar
  • ¼ cup yogurt (non-sour)
  • 1 tsp vanilla essence
  • 1 ½ cups plain flour
  • ½ tsp baking powder
  • 1 pinch salt
  • 100 g dried apricots
  • ¼ cup warm water

Instructions
 

Preparation:

  • Clean and chop dry apricots. Soak them in lukewarm water for 15minutes.
  • If you don't like to use granulated sugar use powdered sugar.
  • Keep butter at room temperature.
  • Use non-sour yogurt or curd.
  • Preheat the oven to 180°C or 350°F.

Recipe:

  • In a mixing bowl take butter first.
  • Add sugar and start beating. I like to use granulated sugar but you can use the powdered sugar as per the measurements.
  • Beat with an electric hand mixer and use the low to medium speed to get a light fluffy mixture.
  • Add yogurt and beat again for 3minutes. Also, add some vanilla essence.
  • Keep a metal sieve on the bowl and add flour.
  • Also, put baking powder and salt.
  • Sieve the flour and salts directly to the bowl.
  • Now add chopped dry apricots (after squeezing out the water) and mix.
  • Add warm water gradually, use a soft spatula and fold the ingredients to combine well.
  • Make a thick and sticky apricot cupcake batter.
  • Fill the cupcake pan with baking liners and fill the 3/4th of each of them with the cake batter.
  • Bake them in a preheated oven for 15 to 18mins.
  • After baking let the cakes rest for a few minutes.
  • Serve these apricot cupcakes warm for breakfast or with coffee with a dash of honey.

Tips:
1) Yogurt gives a nice texture to the muffins. And please make sure it is fresh and not sour.
2) Also you can throw in few nuts in the batter along with apricots if you wish.
