Country chicken soup | Nattukozhi soup | Nattukozhi rasam
Country chicken soup is a thin clear soup prepared by adding spices with chicken cooked water(broth) in an authentic way. Country chicken soup / Nattukozhi soup is a traditional soup recipe in the countryside of south India. It is a healthy soup with gives warmth to the body during the winter season. This soup is tasty and simple like usual chicken soup yet more nutritious. If you have cold, feeling down try this nattukozhi/country chicken soup and instantly you will feel better. Every time when I make nattukozhi kulambu, I reserve few pieces to make this soup. This is a spicy soup compared to Chinese chicken soup.

Country chicken soup | Nattukozhi soup | Nattukozhi rasam
Ingredients
Ingredients to make Nattukozhi soup:
- Nattukozhi – 100gm or few pieces with bone
- Turmeric powder – ½ tsp
- Shallots/small onions – 5
- Garlic – 4pods
- Tomato – 1 small
- Curry leaves - few
- Pepper corns – 1tsp
- Fennel/Saunf/Sombu – 1tsp
- Cumin/Jeera – 1tsp
- Chilli powder – ¼ tsp
- Salt – ½ tsp or required
- Gingelly oil – 2 tsp
- Coriander leaves
Instructions
Preparation:
- Boil nattukozhi pieces with a pinch of salt, turmeric powder, and some water. If you are making large amount cook the pieces in a pressure cooker and retain the broth/cooked water.
- Since I made nattukozhi gravy also I cooked chicken pieces in a cooker and took some pieces for this soup.
- Chop shallots. If shallots are not available, use one medium size big onion.
- Chop tomatoes.
- Crush garlic pods. Crushing gives a strong flavor compared to chopping.
- Dry grind peppercorns, saunf, and cumin seeds.
Recipe:
- Heat a tawa or sauce pan, add gingelly oil.
- Add chopped onions and fry till light brown state.
- Add crushed garlic, curry leaves and saute for two mins
- Add tomato pieces, turmeric powder a pinch.
- Add the pepper, cumin, sombu powder mix.
- Once tomatoes turn mushy add the boiled nattukozhi pieces along with broth(cooked water).
- Add chilli powder. This is optional just to give extra taste.
- Add the required salt.
- Let the soup boil for five mins to mix with the spices.
- Garnish with coriander leaves. Serve hot.

Tips/notes:
- This whole procedure can be done in a pressure cooker. If you are doing in cooker then saute all the ingredients as shown in cooker, add raw chicken pieces, add enough water and salt and cook by giving four whistles.
- Adjust the spice level of pepper and chilli powder based on liking.
- This is a clear soup with freshly ground spices. You can replace whole spices with pepper and cumin powders too. Whole spices when grinding, give a very nice aroma to the soup.
