Lemon rice is one of the popular south Indian recipes prepared by mixing steamed rice with lemon juice and other few basic spices. This lemon rice today I have prepared is no onion no garlic recipe and one can offer this lemon rice to god as prasadam too.

Lemon juice gives a tangy and refreshing taste to the rice. This flavorful lemon rice is a comfortable and delicious lunch box item. For everything there is a beginning. And yes this is a beginners recipe even bachelors can cook and I have explained in detail for beginners. Kitchen kings and queens pls accept this detailed post for such a simple recipe.

Ingredients
  

Ingredients to make Lemon rice

  • Lemon – 1 big or two small
  • Cooked rice – 2 cups
  • Green chilli – 3
  • Turmeric powder – ½ tsp
  • Salt – 1 tsp or as required

To temper:

  • Oil – 1 tbs
  • Mustard – 1 tsp
  • Jeera seeds – 1 tsp
  • Raw peanuts – 2 tbs
  • Gram dal – 1 tbs
  • Split urad dal – 1 tbs
  • Hing/Asafoetida – ¼ tsp
  • Cashew nuts – 6 (optional)
  • Curry leaves – few
  • Red chilli - 2

Instructions
 

Preparation to make Lemon rice | Lemon rice recipe with step wise pictures:

  • Extract juice from lemon.
  • Add salt and turmeric powder with lemon juice. Keep aside.
  • Cook rice in a pressure cooker. For making lemon rice the cooked grains should be separate and not sticky. Cook accordingly.

Recipe to make Lemon rice | Lemon rice recipe with step wise pictures:

  • Heat oil in a kadai. Add mustard, jeera seeds and let them splutter.
  • Add hing and try not to burn. Keep in medium flame.
  • Add peanuts/groundnuts and roast them slowly in slow flame. If you have already fried peanuts then skip roasting again and go to next step.
  • When peanuts are half done add gram dal.
  • Add split urad dal and roast them to light brown color.
  • Add green chilli and curry leaves. Fry for a minute.
  • Add red chillies. Sauté few seconds.
  • Now add lemon juice salt mix and mix with the spices. No need to cook the juice as the vitamin C will be lost by cooking.
  • Add cooked rice and mix well with spiced lemon juice and keep the stove in slow flame.
  • Close the lid for two minutes for the rice to get the flavors.
  • Switch off the stove.

Notes

1) Cooking lemon in hot oil may give bitter taste to the rice. So after adding juice mix, add rice immediately and mix well.
2) Best combination with this lemon rice is potato fry for lunch box.

  • Close the lid for two minutes for the rice to get the flavors.
  • Switch off the stove.
