Mango lassi | How to make sweet Mango Lassi
Mango lassi is a curd or yogurt-based drink prepared by blending mangoes with dahi, milk and sugar. The recipe is available with pictures and a quick video.
Sweet Mango lassi is a popular drink in India and even a kid can make this comforting, homely dessert.
What is a lassi?
Lassi is mainly based on Indian yogurt or curd as we call it. Lassi can be a sweet or salt drink.
Salt lassi is a simply spiced buttermilk kind, beaten yogurt mixed with spices such as ginger, green chillies, and salt.
The sweet lassi is a mix of non-sour curd or yogurt, sugar and sometimes milk and fruits. Among all other lassi recipes, this Mango lassi is the most popular one and widely consumed by Indians during summer.
As you know, Mango is the king of fruits and we like to make all kinds of recipes from sweets to savories to curries to drinks and whatnot.
Two popular drinks are Mango milkshake and this Mango lassi.
Mango milkshake is a straightforward recipe, just blend sweet mangoes with boiled chilled whole milk and sugar and top up with ice cream or serve plainly chilled.
How to make a perfect mango sweet lassi?
Coming back to this sweet Mango ka lassi, I would like to stress certain points where you have to concentrate.
To get a smooth and perfect lassi texture, use fiberless mango variety. Never make lassi with fibrous mangoes, to avoid a gooey mass of mango fiber strands which will be annoying while drinking.
Next is to always use sweet mangoes that are properly ripe. Sour mangoes are not suitable for making this sweet drink.
Likewise half ripen fruit may be strong and pass tang taste in lassi.
In addition to the above-mentioned points, please make sure to use a no sour Indian curd or plain Greek yogurt to get the perfect mango sweet lassi.
Sweet alternates:
If you have super sweet mangoes, you can completely avoid sugar.
Sugar can be replaced with other sweet alternates like honey, brown sugar or jaggery.
Is milk necessary in lassi?
Lassi is actually a dahi/yogurt-based drink and milk may not be required for the plain sweet lassi.
But for mango lassi, I always like to add a little quantity of milk Instead of water to adjust the consistency.
Milk gives the right balance between the sour taste of mango plus curd and the sweet sugar. Adding milk may help to reduce the amount of sugar we add.
But again it is purely our wish and if you don’t wish to have milk in lassi you can simply skip it.
