Ingredients
  

  • 2 Bananas well-ripen
  • ¼ cup Butter melted
  • 1/3 cup Oil
  • ¼ cup yogurt or plain curd
  • 2 Whole eggs
  • 1 tsp Vanilla extract
  • ¼ cup Raw honey or maple syrup

Dry ingredients:

  • 1 ½ cup Flour all-purpose or wheat
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • ¼ tsp salt

Toppings(optional):

  • 1 tbsp Nuts chopped
  • Or
  • 1 tbsp Choco chips

Instructions
 

Preparation:

    Mash bananas:

    • Take two well ripen in a bowl and mash well. I don't mind small chunks in my banana bread. You can mash the bananas completely if you want.
    • Keep aside.
    • Preheat the oven to 350 degrees F (175C).
    • Prep 8*4" bread loaf pan. You can simply grease the pan with oil or line it with parchment paper.

    Recipe:

      Wet ingredients for banana bread:

      • Take a quarter cup of butter in a microwave-safe bowl and melt it for a few seconds.
      • Add this liquid butter to a mixing bowl. Measure 1/3 cup of oil, 1/4 cup of plain Greek yogurt and add into the butter bowl.
      • Add two eggs, one at a time and mix well with a whisk.
      • Finally, add 1/4 cup(around 4tbsp) of raw honey and a tsp of vanilla extract. Combine well and keep aside.

      Dry ingredients:

      • In another bowl, keep a metal mesh and add 1.5 cups of flour.
      • Add 1tsp of baking powder, 1/2tsp of baking soda and 4tsp of salt.
      • Sift the flour with salts.

      Combine wet and dry items:

      • Add the wet mix into the flour bowl and mix with a spatula.
      • Next, add the mashed bananas and combine gently.

      Bake Banana bread:

      • Fill the batter into the loaf pan and bake at 350F.
      • Bake for 40 to 50 mins until a toothpick comes out clean. The time varies based on the size of your pan.
      • The crust opens up after around 30mins and it is perfectly fine and desired.
      • Sometimes you see banana chunks on the open crust. That doesn't mean the bread is undercooked in any way. Baking 40 mins will be more than enough for this size loaf. Moreover, the banana cake continues to cook after removed from the oven. Remove the bread as soon as it comes out of the oven and transfer it to the cooling rack.
      • Let the bread cool down completely before slicing. If you wish to have it warm feel free to enjoy it after ten minutes.

      Notes

      Tips:
      1) This bread can not have perfect slices as I baked with real banana chunks. Mash bananas to a puree if you like perfect slicing bread texture.
      2) Replace honey with your preferred sweetener. But be cautious about the quantity you add as ripe bananas are naturally sweet themselves. Maple syrup, Apple sauce, brown sugar are some good choices.
