Hard boil 4 eggs, remove the shell and cut them into half, keep aside.
Chop the onions finely and I suggest you use red onions. I used white since I didn't have red onions at that time.
Recipe for mutta roast:
Heat 3tbsp of oil in a pan, season with cinnamon, 1/2 tsp fennel seeds, and 1/2 tsp cumin seeds.
When the seeds splutter, add onions and saute well for 5mins until onions become soft and brown. Add 1 tbsp of chopped green chillies and fresh curry leaves.
Next, add a tsp of ginger garlic paste and saute nicely to remove the raw smell of garlic. Add a cup of chopped tomatoes and cook till the tomatoes are soft.
Add 1/2 tsp turmeric powder, 1 tsp of chilli powder, 3/4 tsp coriander powder and 1/2 tsp of garam masala. Now add the salt needed for the masala. Also, put 1/2 tsp of pepper powder and mix. Saute masalas for a few seconds and add a half cup of water.
Next, add the boiled half cut eggs with a lavish amount of fresh coriander leaves. Mix gently without breaking the eggs. Cover with a lid and let the Nadan egg roast simmer for 5 minutes until the masala releases oil.
Switch off and serve the egg roast with dosa, plain rice, or chapati.
1) Boil eggs properly atleast for 20mins.
2) Adjust masala powder quantities to suit your needs.
