Ingredients
  

  • 1 small cauliflower
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 green chilli
  • 1 big onion
  • ¾ tsp ginger garlic paste
  • 2 tomatoes
  • ¼ tsp turmeric powder
  • ½ tsp chilli powder
  • ¼ tsp garam masala
  • ½ tsp coriander powder
  • ¼ tsp fennel powder
  • 2 cups water
  • 1 tbsp salt as per taste
  • 2 tsp pepper powder
  • Coriander leaves

Instructions
 

Preparation:

  • Clean cauliflower and dip in hot water for ten minutes. Cover the pot with a lid while blanching.
  • Chop onions.
  • Prepare ginger garlic paste with 6 garlic pods and a piece of ginger.

Recipe:

  • Heat oil in a pressure pan, season with cumin seeds and green chilli for flavor.
  • Saute with chopped onions and cook them soft.
  • Add ginger garlic paste and stir well to remove the raw flavor.
  • Put the chopped tomatoes and cook them soft.
  • Now add the cleaned cauliflower and mix with the masala.
  • Add turmeric powder, chilli powder, garam masala, coriander powder and fennel powder.
  • Pour two cups of water.
  • Cover with the cooker lid and pressure cook the cauliflower for two whistles.
  • After the pressure drops naturally, open the lid and add required salt for the curry.
  • Cook for few minutes to get the correct consistency of the masala.
  • Add freshly ground pepper powder lavishly and mix well. Always add pepper powder as a last step and don't cook after adding because the vitamin C in pepper will be lost.
  • Finally, garnish with coriander leaves and with chapati or rice.

Notes

Tips: 1) Clean the cauliflower florets properly every time before cooking. 2) Try to use freshly ground pepper powder for the best flavor and taste. 3) Besides pepper, the addition of the chilli powder is to give extra spicy taste and color.
