Veg noodles are one of the most delicious and popular Chinese food. This Veg noodles recipe is prepared by stir-frying cooked noodles with lots of veggies at high temperature.

Ingredients
  

Ingredients:

    Vegetables used:

    • 1 tbsp ginger
    • 1 tbsp garlic
    • 1 onion
    • ½ cup capsicum
    • ½ cup beans
    • ½ cup carrot
    • 1 cup cabbage
    • 1 cup green onions

    To cook noodles:

    • 3 cups raw noodles
    • 2 l water
    • 1 tsp salt
    • 1 tsp oil

    Other ingredients:

    • ½ tsp white sesame seeds
    • ¾ tsp white pepper powder
    • 1 pinch black pepper powder
    • ¾ tsp salt
    • ½ tsp brown sugar
    • 2 tbsp gingelly oil
    • 1 tbsp soya sauce

    Instructions
     

    Preparation:

    • Chop vegetables into thin slices and keep aside.
    • Fine chop ginger and garlic.

    Recipe:

      How to cook noodles:

      • Take two liters of water and add some salt, a tsp of oil.
      • Let the water come to roll boiling temperature.
      • Break the long noodles into halves and add to the boiling water.
      • Cook them without covering for around ten to fifteen minutes until al-dente.
      • Check the doneness by checking one with your fingers. If it can be pressed easily then switch off the stove and drain out the water. Do not cook beyond this stage as the noodles may become mushy and overcooked.
      • Filter out the cooked noodles, apply some oil and keep aside.

      How to make veg noodles:

      • Heat gingelly oil to smoky hot, add finely chopped ginger and garlic.
      • Saute them in high temperature and sliced onions.
      • Add all the sliced/chopped vegetables one by one and continue to saute them in the same high heat.
      • As an optional ingredient add white sesame seeds for crunchiness.
      • Also add salt, White pepper powder, black pepper powder and brown sugar.
      • Now add the cooked and oiled noodles.
      • Mix them with the vegetables gently.
      • Finally, add soya sauce and mix gently.
      • Switch off and serve as piping hot.

      Notes

      Tips/Notes: 1) First of all, saute the veggies and noodles at a high temperature. 2) As we add salt while cooking noodles and since the sauce too has salt in it, keep a watch in salt addition. 3) If you don't have white pepper powder, you can use black pepper powder.
