Break the eggs and take in a deep bowl.
Beat them well and keep aside.
Chop onions and green chillies.
Recipe to make Muttai poriyal:
Heat oil in a pan, add mustard seeds and cumin seeds.
Let the mustard splutter in hot oil, add gram dal and urad dal. Fry them to golden brown color and add chopped chillies.
Put chopped onions and required salt for the eggs.
Add curry leaves and turmeric powder.
Now pour the beaten eggs and start mixing.
Stir and mix quickly and continuously.
Eggs tend to cook fast in just five to eight minutes. Cooking eggs in a flat pan is always a good choice.
Stir well without break, scrap the sides of the pan and mix well.
Soon the eggs become solid and start leaving the pan.
Continue to cook for total ten minutes if using five or six eggs.
Finally add a lavish quantity of black pepper powder, mix and switch off.
Serve hot as a filling breakfast or as a side dish during lunch or dinner.
Tips: 1) Instead of green chillies, use only pepper powder while making for very young kids.
