Ingredients
  

Ingredients:

  • 1 cup proso millet
  • pani varagu
  • 2 ½ cups water
  • 2 tbsp oil
  • ½ tsp mustard
  • ½ tsp cumin
  • 1 tsp gram dal
  • 1 tsp urad dal
  • 1 tbsp chopped ginger
  • 1 big onion
  • 1 sprig curry leaves
  • 3 green chillies
  • 2 red chillies
  • 1 carrot
  • 1 pinch asafoetida
  • 1 tsp salt
  • 1 tbsp lemon juice
  • Coriander leaves

Instructions
 

Preparation:

  • Rinse Pani varagu two to three times well with clean water.
  • Soak for 20 minutes.

Recipe to make Pani varagu upma:

  • Heat oil in a pan, add mustard seeds and cumin seeds.
  • Let them splutter and add gram Dal and urad dal. Fry the lentils to golden brown color.
  • Add onion, curry leaves and green chillies.
  • Saute onions for few minutes and add finely chopped carrots. Cook carrots for few minutes by sauteing.
  • Put a pinch of asafoetida.
  • Pour water and add salt.
  • Mix and let the water come to full boiling. You can cover and boil the water.
  • When water is boiling, add soaked millets and mix well.
  • Cover with a lid and cook for ten minutes in low heat. High flame cooking may burn the bottom.
  • After ten minutes, water is fully absorbed and millet becomes soft.
  • If there is more moisture in the upma still, wait for few more minutes to get it absorbed.
  • Finally, add a few drops of lemon juice, mix and switch off.

Notes

Tips: 1) If you are in a hurry, you can make this Millet upma in pressure cooker also. For pressure cooker, use 2 cups water for one cup millet. And for this kadai method always use 2.5 cups of water for 1 cup millet. This is the measurements for any type of millet. 2) As I use lemon juice for the sour taste, I didn't use tomato. You can use tomato if you prefer while sauteing along with onions. 3) You can use chopped beans and green peas also with carrots.
