Mixed nuts cookies, a crunchy crispy cookie recipe made with butter and lots of nuts. These homemade biscuit-style cookies are super crunchy and tasty with each bite.

Ingredients
  

Ingredients:

  • 4 tbsp butter (room temperature)
  • 1/4 cup cooking oil (non-flavored)
  • 1/4 cup warm milk or warm water (as needed)
  • 2 cups all-purpose flour
  • 1 cup sugar (powdered)
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp chopped cashews
  • 2 tbsp chopped pista
  • 2 tbsp chopped almond

Instructions
 

Preparation:

  • Chop or crush all the nuts as per your preference.
  • Preheat the oven to 350deg F (180deg C).

Recipe:

  • In a mixing bowl, take butter at room temperature.
  • Add sugar and start beating. Use an electric hand mixer in medium speed setting and beat until butter fluffed up.
  • Also, add oil and beat for a min again.
  • Keep a metal sieve, add flour.
  • Also, add baking powder and salt.
  • Sieve the flour with the salts and add directly to the butter, sugar and oil mixture.
  • Add the mixed nuts and use a spatula to mix everything.
  • Combine the crumble mixture using fingers now.
  • Add warm milk(gradually)or warm water and knead the dough.
  • Make a firm holdable dough. If it is too crumbly to hold add a tbsp of milk and combine. Add milk in tbsp(only if needed) for proper mixing.
  • Make small balls and meanwhile preheat the oven to 180°C or 350°F.
  • Place the balls in a greased(or lined with butter/baking paper) baking tray.
  • Give enough space between the balls so that they can expand while baking.
  • Press the balls gently with a fork. Do not press hard as they may break and crumble.
  • Alternately you can just press the ball gently with two fingers.
  • Bake for 15 mins in the preheated oven.
  • Keep the baked cookies in the cooling tray until they completely cool down.
  • Initially, when coming out of the oven, the cookies look softer. Leave them to cool down before serving for crispier cookies.
  • Store in an airtight container.

Notes

Tips:
1) Based on the type of the oven the baking time differs. Keep an eye on the cookies towards the end of the baking and stop baking if they start browning.
2) Use any kind of nuts as per your choice as per measurements.
3) For an extra touch of taste and flavor, use a tsp of vanilla extract.
