Ghee rice | Ghee pulao | Simple ghee pulav
Ghee rice or ghee pulao is a variety rice recipe prepared with basmati rice and ghee with fried cashews. Serve ghee pulav with any kind of spicy gravy. Learn with a video.
This ghee rice is very popular among kids because of the beautiful aroma comes from ghee/clarified butter. On top of that, cashews and dry grapes are used to enhance the taste. Moreover, this Ghee pulao is a perfect lunch box item, which can be taken plain or with some dry/gravy side like Paneer tikka, Matar paneer gravy or Kadai chicken gravy. Usually, my kids like to have this yummy ghee pulav just as it is for lunch.
I suggest making this ghee rice in an open kadai as I explained in this post. But if you are in a hurry, you can make using a pressure cooker. For pressure cooker method, see the tips section for the measurements.

Ingredients
To cook rice:
- 1 cup basmati rice
- 1 bay leaf
- 1 cardamom
- 1.5 tsp salt
- 2 l water (approx.)
To Season:
- 2 tbsp ghee
- 1 star anise
- 1 mace
- 1 cardamom
- 1 big onion
- 2 green chilli
- 2 tbsp cashew
- 1 tbsp dry grapes
Instructions
Preparation:
- Slice onions.
- Rinse and soak the basmati rice with enough water for 20 minutes.
Recipe to make ghee rice:
- In a large vessel, boil water. Add bay leaf, cardamom, salt and let the water come to full boiling.
- When water is boiling fully, add the soaked basmati rice and mix gently.
- Cook the rice for around ten minutes until the grains become soft. But be careful not to cook until mushy stage.
- Once the rice is done, drain the extra water completely and keep aside.
- Heat ghee in a pan, fry star anise and cardamom. You can use cloves also if you like.
- Add sliced onions and fry them to deep brown color.
- By this time a wonderful aroma arises from the browned onions. Now transfer the onions from the pan to a plate and keep aside.
- In the same pan with the remaining ghee, add green chillies, broken cashews and dry grapes.
- Roast these items to golden color.
- Now add these fried cashews, grapes to the cooked basmati rice and mix gently.
- Sprinkle the reserved browned onions on top of it and switch off.
- Serve hot or box for lunch with gravy.

Tips/notes:
1) If you want a no onion ghee rice recipe, just skip it. But the brown onions enhance the taste of the rice.
2) For making the ghee pulao in a pressure cooker, use 1.5 cups of water for 1 cup of basmati rice.
3) Don’t replace ghee with butter or oil as they may alter the taste of the ghee rice.
4) Check the salt while mixing the seasoning and add some if required.
