Cabbage pulao | Simple Cabbage rice recipe
Cabbage pulao is a simple mixed vegetable rice recipe; a perfect lunch box item. Cabbage pulao can be prepared in just 15 minutes with few ingredients. Cooked rice mixed with masala-cooked cabbage along with few spices.
There are many vegetable pulao recipes available in India and this pulao is one of the simplest in the list. Generally, Pulao recipes are prepared using coconut milk or milk, which are very rich in taste. But for this cabbage pulao, coconut milk is not required and will work well with just water. This cabbage pulao is one simplest preparation and one of the healthiest rice items also for weight loss purposes.
Cabbage is known to be an excellent source of vitamin C and K and also helps improve digestion. Try to this wonderful vegetable once in a week atleast.

Ingredients
Ingredients:
- 1 small cabbage
- 2 cups cooked rice (cook rice separately)
- 1 onion
- 1 green chilli
- 1 bay leaf
- 2 cloves
- 1 inch cinnamon
- 2 tsps ginger garlic paste
- 3/4 tsp chili powder
- 1/4 tsp Garam Masala
- 1/4 tsp turmeric powder
- 1 tsp salt
To garnish:
- Few coriander leaves
- 1 tsp ghee (optional)
Instructions
Preparation:
- Chop cabbage finely, watch with water and drain.
- Chop onions and green chilli.
- Make ginger garlic paste (1 inch Ginger plus 6 garlic pods)
Recipe:
- Heat a Kadai with oil, add bay leaf, Cinnamon, fennel seeds and cloves.
- Add chopped onions and green chillies, sauté well.
- When onions become transparent add ginger garlic paste mix well to remove raw flavor.
- Now add turmeric powder, chilli powder, and salt.
- Add chopped, washed and drained cabbage, mix well with the masala.
- Cabbage has its own water to cook so no need to pour extra water. Just Sprinkle some water, close the lid and cook for 5 to 7 minutes in medium temperature.
- After 7 minutes cabbage absorbs all the water and cooked well.
- Add Garam Masala mix well, and add cooked and cooled rice.
- Do not break the rice and mix gently. Keep in low temperature, close with lid for 2 minutes.
- By this time rice absorbs the flavor of cabbage masala and pulao is ready.
- Garnish with few chopped coriander leaves.
- Add a teaspoon of ghee just before serving for a nice aroma.

Tips/notes:
- Use fresh cabbage for this pulao. Always choose cabbage, which is heavy. Heavy cabbages are usually fresh ones.
- You can avoid onions if you don’t like it.
- do not avoid adding Garam Masala as it removes the nutty flavor of raw cabbage.
- You can use ghee instead of oil to prepare this recipe.

Thanks. Yes, sure you can use jeera seeds while seasoning. Adding fennel seeds(sombu) solve the purpose here. But you can replace with jeera seeds.
