  • 2 tbsp oil
  • 1 tsp mustard
  • ½ tsp jeera/cumin
  • ¼ tsp asafoetida/hing
  • 8 small onions or 1 big onion
  • 2 green chillies
  • Few curry leaves
  • ½ tsp ginger garlic paste (mash 1 inch ginger+5 garlic pods)
  • 1 tomato
  • ¼ tsp turmeric powder
  • 1 tsp sambhar powder
  • 1 tsp crystal salt
  • 2 ½ cups water

Instructions

Preparation:

  • Rinse and soak rice, dal together for 30 minutes.
  • Peel and chop onions.

Recipe to prepare Arisi paruppu sadam:

  • Heat oil in a pressure cooker, add mustard, jeera seeds, and hing.
  • When mustard starts spluttering, add chopped onions, green chillies and curry leaves.
  • Saute onion to a transparent color, add ginger garlic paste and saute to remove raw flavor.
  • Now add chopped tomatoes, cook until soft.
  • Add turmeric powder and sambhar powder, cook with masala.
  • Pour 2.5 cups of water. For 1 cup rice and ¼ cup toordal, you may need 2 to 2.5 cups of water depending upon the rice variety you use.
  • You can use the same rice: water measure plus half cup extra water for cooking the dal. So altogether it will be around 2 to 2.5 cups needed.
  • Let the water boil with the masala. Add required salt.
  • When water starts boiling add washed, soaked and drained rice. Mix well.
  • Close cooker lid and cook for 3 to 4 whistles, like you usually cook plain rice.
  • Switch off and let the steam release on it’s own.
  • Open lid, garnish with coriander leaves and a tsp of ghee for an excellent aroma.
  • Serve with papad or pickle and curd.

Notes

Tips/notes: 1) Arisi paruppu sadam is a healthy easily digestible dish suitable for kids and elders. If you are serving for kids you can season with ghee instead of oil. 2) Do not avoid using jeera and hing.
