Carrot soup | Carrot ginger soup | Low carb soup
Carrot soup is an easily digestible, tasty and healthy soup prepared with fresh carrots, ginger for digestion and mint for flavor. This carrot ginger soup dish that can be made in a few mins without much effort.
Carrots are a good source of several vitamins and minerals, especially vitamin A (from beta-carotene), biotin, vitamin K, potassium and vitaminB6.
Adding carrots in the daily menu of kids is a good option. This easy carrot soup is not a clear soup but thick soup hence there is no way for wastage. Let’s see how to make this tasty carrot soup which makes your tummy happy.
CARROT SOUP-LOW CARB SOUP-KIDS FRIENDLY TASTY SOUP
Ingredients
Ingredients:
- Carrots preferably fresh – 400grams or Chopped 1 big cup
- Potato – ½ chopped Optional
- Onion -1/2 sliced
- Ginger – 1inch
- Garlic – 2pods Optional
- Cooking oil/Ghee – 1tbsp
- Salt & Pepper powder – ½ tsp or as required
- Mint leaves - few
- Water – 2 cups
Instructions
Preparation:
- Wash, peel and chop 4 to 5 big fresh carrots and half size potato(Purely optional)
- Peel one inch ginger, chop and 2 pods garlic
- Slice half big onion
Recipe:
- Heat 1Tbsp of cooking oil or ghee in a pressure cooker or soup pan. Add chopped onions.
- Saute for a min and add cleaned ginger, garlic again toss for a min till the raw smell goes away.
- Add chopped carrots and potatoes if using, mix everything . No need to sauté.
- Put mint leaves.
- Add half of the salt mentioned
- Pour two cups (approx.) of water and close the cooker lid/sauce pan lid.
- If using cooker two whistles are enough to cook. In case of pan ten minutes until carrots are cooked well.
- Once the pressure drops open lid and drain the cooked carrots. Keep the broth(cooked water)
- Remove the mint leaves.
- Blend the vegs into a smooth paste
- Keep a tawa /same sauce pan on stove. Add ground paste along with the broth, mix into thick soup consistency.
- Give it a boil no more than a min. Adjust consistency of the soup.
- Add half spoon of fresh ground pepper powder and salt to taste.
- Delicious easy carrot soup is ready. Serve hot.

Tips/notes:
- If you are making for kids/babies please add very less pepper or avoid.
- Cooking carrots in a pan takes little more time.
- Adding potato is optional. Carrot itself when blended gives thick consistency. Potato just gives a glassy look to the soup.
