This is a thick creamy cauliflower soup, which is very much filling and mild. As it is a thick fluffy soup, one can replace this Cauliflower Apple mild veg soup for breakfast or light dinner.
I always prefer these kinds of thick creamy soups for a healthy breakfast choice. For a creamy texture, I add thick full-fat milk, but if you are a vegan you can use coconut milk in place of the milk. Moreover, to make it richer you can add a tablespoon of cream at last and it is purely optional.

Ingredients
Ingredients:
- 1 Small cauliflower
- 1 apple
- 3 tsp oil
- 4 garlic pods
- 1 onion
- Few coriander leaves
- ¾ tsp salt
- 1 tsp sugar optional
- 1 cup milk
- ½ tsp pepper powder
- 1 tsp tomato sauce optional
Instructions
Preparation:
- First of all, clean cauliflower florets with warm turmeric water to remove the heavy pesticides and other chemicals.
- Wash and chop the apple into small pieces.
- Fine chop onion and garlic pods.
Recipe to make cauliflower Apple soup:
- Heat two cups of water in a pan.
- When the water becomes hot, add the chopped apple and cauliflower.
- Cover with a lid and boil them for just five minutes.
- Filter the pieces from the broth(boiled water) and keep the broth aside for later usage.
- Blend these 3/4th boiled cauliflower and apple pieces into a fine paste.
- How to make the cauliflower soup:
- Heat some oil in a flat bottom pan.
- Add chopped garlic, sauté them in high flame.
- Put finely chopped onions and fry them with garlic.
- Now add few chopped coriander leaves or mint leaves for flavor.
- Immediately, pour the blend of cauliflower and apple mix and stir quickly.
- Use the saved broth/veg stock (boiled water) to adjust the consistency of the soup. As it is a thick creamy soup add the broth accordingly. Also, keep in mind that the soup tends to get thicker as time progress.
- It's the time to add the salt and some sugar when soup starts to thicken. Sugar enhances the mild sweetness of the apple and you can opt out the sugar if you want.
- When the soup starts boiling, add thick milk or coconut milk and stir.
- Finally, Sprinkle some pepper powder for spice.
- And a teaspoon of tomato sauce for the touch of tanginess.
- Switch off and serve hot with bread sticks.
