Corn salad | Fresh homemade corn salad

A simple corn salad recipe made with freshly cooked corn kernels, onion and other salad vegetables with an interesting homemade salad dressing.

As we all know, a salad made of fresh green vegetables or fruits is the healthiest food choice one can make. Most of the veg salads have raw vegetables, boiled legumes, or whole grains along with edible seeds and nuts.

Similarly, non-veg salads can have cooked meats, seafood with greens and veggies.

Salad making is an interesting job and finding a perfect dressing/spice mix for each salad recipe is the best part of it. Today I showed you the simple boiled corn salad with super quick homemade dressing.

I used fresh and plain yellow corn to make this corn salad, but you can use sweet corn also. Further, to boil corn in a cooker just one whistle is enough and if you are cooking in a pan boil until soft.

Moreover, this is the same process to make masala corn chat. Make this spicy lemon masala corn in few minutes and enjoy it along with tea.

Ingredients
  

Ingredients:

  • 1 cup corn kernels (2 fresh corns)
  • 1 onion
  • 1 tomato
  • 1 carrot

For salad dressing:

  • 1 tsp oil
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ½ tsp pepper powder
  • ¼ tsp chilli powder

Instructions
 

Preparation:

    How to remove the kernels from fresh & raw corn cob:

    • Remove the outer covers of the fresh corn layer by layer.
    • Using a strong and large knife, just shave off the kernels from top to bottom like this. Please refer to the video for better understanding.
    • Do not remove the kernels too deep from their roots as the roots may be too hard to boil.
    • Collect all the grains in the same way and boil and you can use this in different ways like salads, gravies, stir-fries and chat recipes.

    Boil corn kernels:

    • Add a cup of water and pressure cook the corn for one whistle.
    • Release pressure and drain the excess water if any.

    Recipe:

      Salad dressing:

      • In a small cup, add a tsp of oil preferably olive oil.
      • Add lemon juice with oil. Also add salt, pepper powder and chilli powder.
      • Mix everything and your salad dressing is ready.

      Fixing salad:

      • Take cooked corn in a large mixing bowl.
      • You can add the salad dressing now and mix well with the warm corn. This is just the masala corn we get in chat stalls.
      • To make a salad, add onion and tomato pieces.
      • Also, add grated carrot and green leaves like fresh spinach or mint if you wish.
      • Combine them all and serve the salad as breakfast or starter before a meal. It is a healthy snack option too.

      Tips:
      1) You can use readymade corn kernels too to make this salad. But as I said it is much easier to make a fresh one in a few minutes.
      2) Moreover, you can use extra additions like boiled peanuts and capsicum also in this salad.
      3) Do not overcook the corn and the kernels should be 3/4th cooked to get a crunchy fresh salad.
