Garlic chicken roast | Grilled garlic chicken roast recipe
Garlic chicken roast is a simple roasted chicken recipe made by grilling garlic sauced chicken pieces. Learn with a video and stepwise pictures.
You can use either skinned or skinless chicken for this grilled chicken garlic recipe. I used skinless chicken legs today. The recipe is very simple for this garlic chicken roast and making an aromatic garlic sauce is the most important step. Later the sauce marinated chicken is first cooked in baking mode and then grilled for few minutes in the oven. For those who don’t have an oven, I will explain how to do this garlic chicken using a Tawa grilling.
As Christmas is coming around I thought of posting this simple chicken garlic roast, which can be served as a starter. Moreover, this roast may not need any fancy dip other than simple tomato ketchup.

Garlic chicken roast | Grilled garlic chicken roast recipe
Ingredients
Ingredients:
- 4 chicken legs or breast pieces
- 3 tsp butter unsalted
- 15 garlic pods
- 1 tsp oregano
- 1 tbsp soya sauce
- ¾ tsp salt
- ½ tsp pepper powder
- 1 tsp lemon juice
- Oil/butter to cook & grill
- Coriander leaves

Preparation:
- Peel and chop garlic pods.
- Clean chicken pieces properly and remove extra water completely.
Recipe for making the garlic chicken roast:
How to make garlic sauce:
- Heat butter in a pan, add finely chopped garlic, fry until raw flavor disappear.
- Add oregano leaves, soya sauce, salt, and pepper powder. Mix well.
- Finally, add some lemon juice.
- Switch off and set aside. Garlic sauce is ready.
Garlic sauce marination:
- Slit cleaned chicken pieces in four or five places as shown.
- Apply the garlic sauce generously on all the sides such that the sauce reaches inside the chicken.
- Keep this marination for an hour. But if you don't have time, just ten minutes of marination would be fine.
How to grill garlic chicken using microwave oven:
- To begin with, apply butter or oil in the baking tray, place the marinated chicken pieces.
- Preheat the oven to 180°C. Start convection cook mode (bake mode) and set the timer for 20mins.
- After five minutes of cooking, open the microwave door, flip the pieces.
- Similarly, after ten minutes of cooking take the baking tray out, drizzle oil, flip the pieces and put the tray back in oven and cook for the remaining ten minutes.
- Totally after 20mins of baking in convection mode, take out the tray. By this time chicken pieces are cooked tenderly.
- Transfer the pieces to the tall grilling metal rack, and keep inside the oven.
- Now set the grilling mode ON by pressing the respective button and set the timer for 10mins.
- Let the cooked chicken pieces grill for ten minutes.
- Serve the tenderly cooked juicy, flavorful garlic chicken roast with a tomato ketchup.
How to grill garlic chicken in Tawa:
- If you don't have an oven, then use a normal dosa tawa or grilled Tawa to make this garlic chicken.
- Just heat the tawa with butter or oil, place to the sauce marinated chicken pieces. Reduce the flame to low temperature and cover with a lid.
- Cook each side of the chicken for 5 mins. Flip in between and be careful not to burn the bottom.
- Every time after flipping, cover with the lid again and drizzle oil for each side.
- For boneless chicken garlic, it takes just 10mins in total for each batch.
- And if you use chicken pieces with bones, minimum 15mins are required to cook the pieces completely.
- Once when the chicken is done with cooking, remove the lid, drizzle few drops of oil and continue to roast to get grilled feel for 5more minutes.

Tips:
1) Always try to use freshly cut chicken pieces for better taste. In case if you have frozen chicken thaw it completely before using.
2) Moreover, use medium size pieces for better and complete roasting.
