Schezwan chicken fried rice | How to make Restaurant style Schezwan chicken fried rice
Chinese special popular Schezwan chicken fried rice made with stir-fried chicken, eggs, vegetables and cooked rice, sauteed in high temperature along with Schezwan special sauces and spices. Learn with video and stepwise pictures.
Making a restaurant style Schezwan chicken fried rice at home is not a big deal if all the special spices are used properly. You may get the temptation to use the readymade Schezwan sauce available in the market. Of course, you can use that readymade sauce to make a quick fix Schezwan fried rice or noodles. That method is useful if you are in a hurry. If you use readymade sauce, just saute the veggies, mix sauce, add salt, pepper, cooked rice, combine in high flame and it’s done.
But in this post, I showed you the traditional method of making the Schezwan fried rice without readymade Schezwan sauce. Actually, this method is not very difficult because of the easily available ingredients.

Moreover, as I already mentioned in my other Chinese food posts, always cook Chinese foods in high fire by sauteing quickly. Also, I never use Ajinomoto(or any taste enhancer) and if you really want, add just pinch of it. You may like to check out the other Chinese recipes from my blog.
Furthermore, as you may know, for noodles cut the vegetables in julienne style (thin lengthy strips) and for fried rice, it is advisable to chop them finely.
Because we cook veggies only by sauteing in oil in high fire and small cut pieces are easy to cook quickly. Ideally, Chinese foods take very less time to prepare except for the extensive chopping time.

Schezwan fried rice | How to make Restaurant style Schezwan chicken fried rice
Ingredients
Ingredients:
- 250 g boneless chicken
- 2 cups basmati rice (400g)
- 2 eggs
To cook rice:
- 2 lt water
- 1 tsp oil
- 1 tsp salt
Other ingredients:
- 2 tbsp gingelly oil
- (+2 tbsp oil to cook chicken & eggs)
- 1 tbsp garlic chopped
- 1 tbsp ginger chopped
- 1 big onion
- ½ cup chopped beans
- ½ cup chopped carrots
- 1 cup chopped capsicum
- 1 cup green onions
- ¾ tsp white sesame seeds
- 2 tsp red chilli paste
- 1 tsp soya sauce
- 1 tsp salt
- 1 tsp pepper powder
- ¼ tsp sugar/brown sugar
- 1 tsp vinegar
Instructions
Preparation:
- Clean and finely chop all the vegetables. Keep the ingredients readily available.
- Soak basmati rice/small grain rice for 30 mins.
- To make red chilli paste soak red chillies in warm water for 15 mins. Grind as paste and keep aside.
Recipe to make Schezwan Chicken fried rice:
How to cook the rice:
- Boil two liters of water in a large vessel adding salt and oil.
- Add soaked rice and cook until they become soft but not mushy. I never like to undercook the rice in my recipes.
- Keep an eye and check the doneness of the rice by checking frequently. Press one grain, if it is soft(in about 10mins)switch off immediately.
- Filter out the cooked rice and drain all the water. Keep the rice aside.
How to fry chicken & eggs:
- First heat oil in a pan, add small boneless chicken pieces and pinch of salt & pepper powder.
- Cook the chicken pieces in oil by sauteing occasionally in medium flame. No need to add water as the chicken will be cooked in its own moisture.
- After about six minutes, when the pieces turn white in color, move them to one side of the pan.
- Add two eggs in the same pan with a pinch of salt & pepper and fry quickly.
- In two minutes eggs roll up and leave the pan.
- Mix with the chicken, saute quickly, switch off and keep aside.
How to make Schezwan fried rice:
- In a large wok/pan, heat oil, add chopped ginger and garlic.
- Saute them in high flame for two minutes and add chopped onions along with beans and carrots.
- Fry quickly and put capsicum with green onions.
- Put a teaspoon of white sesame seeds for the Chinese flavor.
- Add red chilli paste, mix well and put the fried chicken pieces with eggs.
- Now add soya sauce, salt and pepper powder.
- Stir quickly and put the cooked rice, mix well in same high flame.
- Finally, add some sugar/brown sugar and white vinegar.
- Combine and fry the rice in high temperature for few minutes until rice becomes hot. Switch off.
- Sprinkle some green onions for garnishing and serve super hot.

Tips:
1) First of all, chop the veggies super fine to cook them quick & crunchy.
2) Secondly, do not over saute or overcook the vegetables. The veggies should retain the crunchiness.
3) If you don’t have white sesame seeds, just skip them.
4) Also, if you like you can add a dash of tomato sauce.
