Ingredients
  

Ingredients to make Omapodi mixture:

  • Besan/gram flour – 1 cup 200g
  • Ajwain/carom seeds – 1 tsp
  • Chilli powder – 1 tsp
  • Hing/Asafoetida – ¼ tsp
  • Ginger garlic paste – 1 tsp
  • Salt – ¾ tsp or required
  • Water –approx. ½ cup
  • Peanuts – 100g
  • Oil – to fry
  • Curry leaves – ½ cup

Recipe to make Omapodi mixture | Plain sev mixture:

    Preparing Omapodi dough:

    • In a big bowl take besan flour, ajwain seeds, chilli powder, hing, salt and ghee.
    • Mix everything together by adding some water and make dough. I used half cup of water. Dough’s consistency should be neither hard nor soft (sticky) and should be like chapatti dough.
    • Apply some oil inside the murukku maker and fix the Omapodi (large idiyappam) design and keep it ready.

    Recipe to prepare Omapodi mixture:

    • Heat oil for deep frying.
    • Check the heat by dropping one small ball of dough inside oil. If it rises immediately then oil is in correct heat.
    • Fill the sev press with dough and fix it.
    • Press the dough inside oil carefully in circular motion. Do not over load.
    • Leave undisturbed for few minutes. Once the sizzling sound stopped flip to other side carefully.
    • Fry for few more minutes until golden brown color achieved.
    • Break and store simple Omapodi in an airtight container.
    • In the same oil fry raw dried peanuts until golden brown. It takes 3 to 5 minutes to fry one batch of groundnuts. Stir occasionally.
    • Fry peanuts batch by batch.
    • At last fry few curry leaves.
    • Mix Omapodi and fried peanut with curry leaves together.
    • Sprinkle salt and pepper if needed.
    • Serve crispy Omapodi mixture as evening snack with hot tea.

    Notes

    Tips/notes: 1) Add a tablespoon of rice flour in the Omapodi dough if you like. Rice flour gives extra crispiness. This step is optional. 2) If you like plain sev stop with step seven. 3) You can grind carom/ajwain seeds with chilli powder, salt and hing with some water and mix with dough.
