Kara paruppu is the South Indian style of dal recipe, made with toor dal and basic spices and served as an accompaniment for hot rice, chapati, roti and phulkas. This Kara paruppu goes well with dosa also.

Ingredients
  

Ingredients:

  • 200 g toor dal (cooked)
  • 3 tsp oil
  • ½ tsp mustard
  • ½ tsp cumin seeds
  • 2 red chillies
  • 2 green chillies
  • 1 big onion
  • 6 garlic pods
  • 1 sprig curry leaves
  • 1 pinch asafoetida
  • 1 to mato
  • ¼ tsp turmeric powder
  • 1 tbsp sambar powder
  • 2 cups water (approx.)
  • 1 ½ tsp salt
  • 2 tbsp coriander leaves
  • 1 tsp ghee (optional)

Instructions
 

Preparation:

  • Soak toor dal for 30mins, pressure cook for 4 whistles.
  • Cook toor dal softly, mash and keep aside.
  • Chop onions, peel the garlic and set aside.

Recipe for making the Kara paruppu:

  • Heat oil in a pan, season with mustard and cumin seeds.
  • Add red chillies and green chillies.
  • Put chopped onions and curry leaves.
  • Saute for few minutes until the onions become transparent.
  • Add chopped garlic and fry well in oil to remove the raw flavor.
  • Put some asafoetida.
  • Also, add turmeric powder and sambar powder.
  • Add some water to cook the masala powders.
  • Now add cooked and mashed toor dal.
  • Pour a cup of water to adjust the consistency of the dal.
  • Add salt to suit your taste.
  • Mix and let the dal cook for few minutes until bubbling.
  • Finally, add chopped coriander leaves and switched off.
  • Before serving you can just add ghee.

Notes

Tips: 1) Firstly, toor dal is the best choice for making this Kara paruppu. But you can follow the same recipe for making moong dal Kara paruppu. 2) Next, if you have shallots please use them instead of big onion as small onions are better in taste. 3) Finally, do not avoid asafoetida as it is one of the key ingredients in this Kara paruppu. Also, I recommend not skipping the garlic. 4) Last but not least, you can adjust the spice level by increasing or decreasing red chilli and sambar powder.
