Purple cabbage sabji recipe
Purple cabbage sabzi is a simple and tasty side dish for roti made with purple cabbage and green peas, stir-fried in onion tomato-based sabzi. Learn with a video.
This is a quick-dry curry to make in the busy mornings and can be packed for lunch boxes as well. As an interesting twist, this cabbage sabji can be used as filling in rolls and parathas.

I used frozen green peas today as I didn’t have fresh peas. If you use fresh peas cook a little bit longer and make sure it is cooked well before adding the cabbage. Because cabbage tends to cook faster and lose its crispness very fast.
Always while cooking cabbage never pour lots of water and sprinkle just a few tablespoons of water only when required to retain the freshness and crispness.
Though both green cabbage and purple cabbage taste equally good my personal favorite is purple cabbage.

Purple cabbage sabzi | How to make cabbage sabji
Ingredients
Ingredients:
- 3 cups purple cabbage shredded
- 2 tsp oil
- ½ tsp mustard seeds
- ½ cup onion chopped
- 1 tomato
- 1 cup green peas fresh or frozen
- ¾ tsp chilli powder
- ½ tsp cumin powder
- ¼ tsp garam masala
- Few tbsp water
Instructions
Preparation:
- Grate the purple cabbage into long strands. You can also chop the cabbage.
- Chop onion and tomato.
Recipe:
- Heat oil in a pan and temper with mustard seeds.
- Let the mustard splutter and add chopped onion.
- Saute the onion for few minutes until they become transparent.
- Add tomato and required salt for the cabbage. Cook the tomatoes till they are soft.
- Next, add green peas and mix well, cook for a few minutes.
- Add the cabbage now and mix with the masala.
- Put chilli powder and roasted cumin powder.
- Next add some garam masala powder.
- Now sprinkle a few tablespoons of water, cover with a lid and cook the cabbage and peas for five minutes.
- When water is absorbed fully, the cabbage will be dry and cooked well.
- Switch off and serve with rice or roti.

1) You can use green cabbage in place of the purple cabbage to make the cabbage peas subzi.
2) If you are using fresh green peas, make sure the peas is cooked well before adding the cabbage.
