Tomato pulao | Easy tomato rice recipe
Super quick tasty tomato pulao prepared by cooking tomatoes on a pan with flavourful spices and mixed with cooked rice.
This tomato pulao is an aromatic lunch box item tastes great with simple onion raita. Steam rice separately and you can prepare this easy tomato rice in just 15 minutes.
There are multiple variations available around various parts of India to make this tomato pulao and today I chose the simplest method yet tastiest one. This method you can say as a fusion method of tomato biryani and tomato gravy rice.
You can make this pulao with any kind of aromatic rice variety like Basmati rice or simply use your regular rice. The mint leaves and the whole spices added in this pulao gives a biryani touch to the tomato rice.
Few health notes on tomato.
Tomatoes are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits including reducing the risk of heart disease and cancer.
These tasty Tomatoes are also a great source of vitamin C potassium folate and Vitamin K.
The tangy tomatoes contain a high amount of lycopene that makes skin less sensitive to UV rays. It also contains high amounts of Vitamin C that are helpful in treating acne and oil oily skin achieving even skin tone and a healthy glow.

Ingredients
Ingredients:
- 3 tomatoes
- 1.5 cups cooked rice
- 1 tbsp oil or ghee
- 1 bay leaf
- 1 cinnamon
- 1 cardamom
- 2 cloves
- 1 onion
- 2 green chilli
- ½ tsp ginger garlic paste
- 5 cashews (optional)
- Few mint leaves
- ¼ tsp turmeric powder
- ½ tsp chilli powder
- ¾ tsp salt (as per taste)
- Few coriander leaves
Instructions
Preparation:
- Cook rice, let it cool down & set aside.
- Wash and chop tomatoes.
- Peel and chop onions.
- Keep ginger garlic paste ready.
Recipe:
- Heat oil in a pan; add the whole spices bay leaf, cinnamon, cloves, and cardamom.
- Add chopped onions and green chillies with the whole spices.
- Saute onions for two minutes to transparent color and add ginger garlic paste.
- Stir the ginger garlic paste nicely in oil to remove the raw flavor completely.
- Now add broken cashew nuts If you are using. This Step is optional. You can avoid if you don't have cashews.
- Put some fresh mint leaves and saute.
- Add turmeric and chili powder, mix well with the masala.
- Put finely chopped tomatoes and cook well. And the required salt for this pulao at this stage. Salt helps tomato to cook fast.
- When tomatoes become cooked and soft, add cooked rice and mix with the tomato masala gently.
- Cover the pan with a lid and keep in low flame for 5 minutes.
- After 5 minutes open the lid garnish with coriander leaves and serve hot.

Tips:
- You can use Bangalore variety or the country variety to make this pulao.
- Country tomatoes are tangier than Bangalore varieties hence use accordingly.
- Add green chillies and chilli powder to suit your spice taste.
