Peanut vegetable salad, made with boiled groundnuts (peanuts), raw vegetables, lemon, and few spices.
What else could be a guilt-free comfortable breakfast other than a mild healthy vegetable salad? Obviously, any kind of fresh salad would benefit a person’s health in multiple ways.
This simple boiled peanut salad with vegetables is a satisfying meal because of the fresh raw veggies and a fruit. Yes, there is an apple added in this fresh salad. Salad making is a creative art like sandwich making. Moreover, any kind of salad is purely based on imagination and understanding our taste buds in a better way.
As already mentioned, I use boiled peanuts (groundnuts) along with cucumber, carrot and an apple. Furthermore, the highlight of this salad is the tasty addition of the choice of dressing.
It’s good to know about the health benefits of this wholesome peanut salad:
Groundnut skins are rich in phenolic compounds, that they are antioxidant rich.
Groundnut contains monounsaturated and polyunsaturated fats that keep the heart healthy.
Peanuts improve satiety and help maintain weight loss.
Groundnuts are abundant in the vitamins niacin, folate, pantothenic acid, thiamin, riboflavin, choline, Vitamin B6 and Vitamin E and rich in minerals like magnesium, phosphorous, potassium, zinc, iron, copper, manganese and selenium.
Having said these all, last but not least, consuming peanuts in boiled form is even healthier than fried form.
Cucumbers are a refreshing, nutritious and incredibly versatile addition to any diet. They are low in calories but contain many important vitamins and minerals, as well as high water content.
Next comes carrot as you may all know, a carrot is high in beta-carotene, hence helps in eye & skin health. Also loaded with fiber and vitamin A, carrot gets a vital place in any raw vegetable salad.
An apple a day keeps the doctor away. Apple green or red helps for whiter teeth, avoid Alzheimer, protects against cancer, heart disease, obesity, cholesterol, gall bladder stone and many more.

Ingredients
Ingredients:
- 1 cucumber
- 2 carrots
- 1 apple
- 1 cup boiled ground nuts(peanuts)
- 1/2 tsp salt
- 1/4 tsp chat masala
- 1/4 tsp pepper powder
- 1/4 tsp amchoor powder
- 1/2 lemon
- 1 tbsp honey
Instructions
Preparation:
- Peel the skin of the cucumber and carrots. Chop them into small quarter inch pieces.
- Wash apple and chop just before making salad to avoid oxidation and discoloration.
- Boil groundnuts in a pressure cooker for 2 whistles until soft.
- Drain the water and keep boiled peanuts ready.
Recipe for making the salad:
- In a large mixing bowl, add chopped cucumber, carrots, and apple pieces.
- Add boiled peanuts with the vegetables and apple.
- Put the spices like salt, chat masala, pepper powder a pinch and amchoor powder if using.
- Squeeze half a lemon into the salad.
- Also, add a tbsp of honey and mix everything.
- Toss gently to combine all the ingredients.
- Serve immediately when the veggies are still fresh.

Tips:
1) Adding chat masala and amchoor powder gives a nice chat touch to the salad. You can avoid if you like the salad plain.
2) Furthermore, the lemon juice, honey and pinch of pepper powder give an excellent combination of taste to the salad.
3) As Apple has lots of fiber, it is a good choice to add in the salad. You can use a green apple or pear fruit or raw mango in place of the red apple.
4) If you like pure vegetable salad don’t add apple.
