Aval upma is a simple and versatile dish made with white or red rice flakes(beaten rice), onions, chillies and fried peanuts.
I have one more version of the aval upma(with coconut) recipe which includes coconut in its preparation. As this is a festival time we often need prasadham recipes which require minimum ingredients and effort.
This Aval upma is definitely a keeper for beginners to prepare during this Navaratri festival. Also, this is a delicious breakfast item in many homes during busy mornings.
Like Sundal items this simple upma also can be offered to God as well. Today I made it with thick white aval and you can use thin aval and red rice flakes also.

Aval upma recipe | How to make aval upma
Ingredients
Ingredients:
- 3 tsp oil
- 2 cups of thick rice flakes (aval/poha)
- Rinse & drain the water
- 2 tbsp groundnuts (raw or fried)
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 tbsp gram dal (optional)
- 1 big onion
- 3 green chillies
- 1 sprig curry leaves
- Few coriander leaves
- ¾ tsp salt (as per taste)
- Half lemon
Instructions
Preparation:
- Chop onions and green chillies.
- Rinse and soak white aval for just a minute, drain all the water, squeeze well and keep the aval in a plate. I used usual thick white aval. If you are using even thicker red aval soak for extra two mins until they become soft. Immediately drain water, squeeze and keep aside.
Recipe:
- Heat oil, add raw peanuts (groundnuts), fry in medium heat.
- Continue to fry until they become brown and popping one by one.
- Skip this step of frying peanuts if you are using already fried groundnuts.
- When they are brown and crispy add mustard seeds and cumin seeds. Let them splutter without burning.
- Add onions, curry leaves, coriander leaves and green chillies, saute them until soft texture.
- Put salt, turmeric powder and mix.
- Now add the soaked and squeezed aval and mix gently.
- Finally, add few lemon drops, stir and switch off.

Notes
1) First of all, never soak aval/rice flakes for longer time because they become too soft and soggy.
2) Furthermore, green chillies suit best for this Aval upma.
3) If using fried peanuts, add them at last and mix.
4) For richer version add cashew nuts.
