Aval payasam recipe| How to make Aval payasam | Poha milk kheer

Aval payasam is one of the easiest payasam recipes prepared by cooking beaten rice in milk and added with sugar.

In this festive season, I would like to post a few simple and easy to cook traditional sweets and snacks.

Beginners can even do this Aval payasam in just 20 mins to surprise your guests. I used thick small white variety Aval, but you can use red Aval or big flat Aval also. The only thing to note is the cooking time varies for each of these varieties. Avoid overcooking the rice flakes as we don’t want to lose the shape. If you overcook, then Aval becomes too soft and blend in the payasam.

You may think Aval/Poha is the same as white rice and not so healthy. If so, think twice, Poha too has a few surprising health benefits.

  1. First of all, poha is gluten-free hence those who are allergic to gluten can consume this.
  2. Beaten rice is easily digestible and a good friend for your tummy.
  3. This is a wholesome meal, which contains carbs, iron, vitamins, and antioxidants.
  4. It provides a good amount of Vitamin B6 and hence aids blood sugar stabilization.
  5. Aval or Poha has 20mg of iron in every 100g of raw rice flakes. Cook aval upma and squeeze a lemon for vitamin C, which helps in the absorption of iron.

You can make this Aval payasam with mild sweet and serve as breakfast too for your kids. Relish this Poha kheer hot. The chilled kheer is suitable for an easy dessert.

Also, make this Aval payasam for prasadam or naivedyam during auspicious occasions. During festival days we won’t have time to do a complicated sweet and I always choose quick payasam/kheer recipes for prasadam.

Ingredients
  

Ingredients:

    To roast and grind:

    • ¼ cup (2 tbsp aval)
    • 1 tbsp cashew nuts

    To garnish:

    • 1 tbsp ghee
    • 1 tbsp cashew nuts
    • 1 tsp dry grapes (optional)

    For payasam/kheer:

    • 2 tbsp ghee
    • 1 cup aval/poha/beaten rice
    • 2 cups water
    • 3 cups boiled milk (750ml)
    • ½ tsp cardamom powder
    • 8 tbsp sugar
    • 1 pinch salt (optional)

    Instructions
     

    Preparation:

    • Boil milk and keep aside.
    • Chop cashew nuts into small pieces.

    Recipe to prepare Aval payasam:

    • First in a pan, dry roast 2 tablespoons of Aval/rice flakes and 1 tablespoon of cashew nuts for 5 minutes in low flame.
    • Be careful not to burn the rice flakes just we need to make the Aval and cashews crisp.
    • Now remove from the pan and make it as a powder, keep aside.
    • In the same pan heat a tablespoon of ghee and fry cashews until golden brown color and keep them aside for garnishing.
    • Now in big kadai and heat the remaining ghee.
    • Add a cup of Poha and start frying in medium heat. Again here we are not going to roast them until they become hard, just light browning is enough.
    • Pour 2 cups of water to cook the rice flakes and keep it covered for 5 minutes.
    • Cook Aval until they become soft but not mushy. The shape of rice flakes should be retained.
    • After around 5 minutes Aval absorbs all the water.
    • Now add boiled thick milk and mix.
    • Add the ground Aval, cashew powder into the milk and mix well to avoid lumps. This powder gives a thick body to the kheer/payasam.
    • Let the milk come to a boil nicely and by this time the powder is cooked and payasam thickens.
    • Add sugar according to your taste. For this measurement, I added 8tbsp sugar.
    • Again wait for 5 minutes until payasam gets a nice texture.
    • Sprinkle cardamom powder for fragrance.
    • Finally, add the fried cashews and dry grapes. As my kids don't like dry grapes I didn't use.
    • Serve hot as a snack or energetic breakfast. You can serve this chilled as a yum dessert. Also, this is an easy and quick prasadam recipe during festive occasions.
