Aloo palak sabzi | How to make potato dry curry with spinach
Aloo palak sabzi is a dry stir fry recipe made by tossing potatoes in basic spices and fresh spinach leaves. Learn this basic Aloo spinach dry curry with the help of a video and stepwise pictures for beginners.
This Potato spinach sabzi is a regular side dish for rotis and parathas in most North Indian homes. In fact, this Aloo sabji can be a good match with simple rice and dal tadka.

Aloo palak sabzi | How to make potato dry curry with spinach
Equipment
- Frying pan
Ingredients
Ingredients:
- 6 potatoes (medium size)
- 2 cups spinach (palak chopped)
- 2 tbsp oil
- 1 tsp cumin seeds
- 6 garlic pods
- 3 green chillies
- 1 onion (3/4 cup)
- ¾ tsp salt (as per taste)
- ½ tsp chilli powder
- ¼ tsp turmeric powder
- ¼ tsp asafoetida
- Few tbsp of water
Instructions
Preparation:
- Rinse six medium size potatoes, peel the skin and chop into bite-sized pieces. Keep aside.
- Wash spinach leaves(around two cups packed) and chop them, keep aside.
- Chop 1 medium size onion (3/4 cup) and garlic (6 pods).
Recipe for potato spinach stir-fry:
- Heat 2 tbsp of oil in a frying pan.
- Add 1 tsp cumin seeds and let them fry for few seconds.
- Next, add fine chopped 6 garlic pods and fry them for half a minute.
- Add one medium size onion (around 3/4 cup) and 3 slit green chillies.
- Saute the onions for a minute until they become transparent.
- Put 3/4 tsp of salt(as per taste) required for the sabzi.
- Add 1/2 tsp chilli powder and saute just ten seconds.
- Next, add the chopped potato and saute for two minutes.
- Aloo pieces tend to stick to the bottom hence stir without break.
- When potato pieces start roasting slightly add palak(spinach) leaves and mix.
- Add 4 tsp of turmeric powder.
- Sprinkle few tablespoons of water and mix quickly.
- Put some asafoetida and cover the pan with a lid.
- Cook potato for around eight minutes until the potatoes become soft.
- Stir often to avoid potatoes stick to the bottom.
- Switch off and serve with dal rice and rotis.

1) Add garam masala powder a half teaspoon at the last stage if you wish to enhance the flavor.
2) Similarly, you can use a few drops of lemon juice before switching off to get a tang touch.
