Banana muffin or Banana cupcake is easy to do and a healthy muffin variety, prepared with bananas and whole wheat flour without eggs.
This banana cupcake is a regular breakfast muffin item for kids in western countries. As we add honey for the extra sweetness, which replaces sugar, makes this banana muffin an even healthier snack or breakfast.

If you see the ingredients, you can easily relate these muffins with another popular global breakfast, which is nothing but pancakes. Although the ingredients look similar except eggs for pancakes and these muffins, the method of making is entirely different. The first one involves pan-frying and the latter involves baking in the oven. Consider this whole wheat banana cupcake completely healthy as we use wheat flour and honey in place of all-purpose flour and sugar.
If you are a regular reader of my blog you might already be knowing that, I post banana recipes regularly like, Banana bread
Like every other kid, my juniors also like bananas a lot. Of course, they can eat them simply plain, still, I always love to include bananas in a snack or breakfast or any tiffin item. My kids eat even banana rice 😉 …Yes, mix mashed banana with hot rice, ghee and a tsp of honey… Banana rice is ready to have instantly. My mom used to feed this banana rice often when we were kids… I follow the same now with my kids 😉

Tips:
1) Do not bake beyond the mentioned time.
2) I used 5 small bananas and I like banana dominating muffins. If you don’t like too much banana, then reduce the number of bananas from 5 to 3 and increase the flour quantity to 2 cups instead of 1.5cups.
3) Cinnamon powder is an optional ingredient and I love to include it in all my cake baking.
4) You can use brown sugar in place of honey.
