Pancake | American fluffy pancakes recipe

Pancake, a flat thick cake prepared from a starchy batter, which contains flour, eggs, milk, and cooked on a pan or tawa.

Pancakes have variety of names and methods involved around the world. Almost all the countries have this pancake in their breakfast menu with different names.

However the basic ingredient is flour made of any local grain. It’s clearly an ancient form of food as evidenced by its fact of appearing everywhere across the globe.

In US and Canada it’s called as pancake (thick&fluffy) and English call this as crepe(thin & big) and South Indian pancakes are often called as dosa (cheela, uthappa, appam).

Pancakes are generally made as mild sweet breakfast around the world but in India we prefer it as thin crepe like dosas accompanied with gravy. Serve this fluffy pancakes as breakfast or snack or side item in kids box.

I have been introduced to this thick, fluffy pancakes, when we visited US, and this pancake attracted me as a super quick kids friendly breakfast. Also, I like its humbleness of accepting any fancy ingredient (like cinnamon, vanilla, oats) and yet taste great.

You can make this pancake instantly without any fuss of soaking and fermenting like rice dosa batter.

Generally pancakes are made of all-purpose flour or plain flour or Maida (as called in India). But today I mixed it with whole wheat flour (for healthy addition) and as I mentioned already, still it tasted yum. You can make fully with plain flour or wheat flour. It’s our personal choice to make creative additions to the basic recipe.

Today I will show the Classic recipe of American sweet pancake and you can make any variation as you like.

Ingredients
  

Ingredients:

  • 4 tbsp maida
  • 2 tbsp whole wheat flour
  • 1 pinch salt
  • 1 pinch baking powder (optional)
  • 1 pinch cinnamon powder (optional)
  • 3 tsp sugar
  • 2 eggs
  • 1/2 cup milk (boiled and cooled)
  • 1/2 tsp vanilla essence
  • Butter or ghee to fry

Instructions
 

Recipe:

  • In a mixing bowl, add plain flour, wheat flour, baking powder, salt and sugar.
  • Mix all the dry ingredients.
  • Add eggs, milk and vanilla essence.
  • Whisk or mix everything together nicely without any lumps.
  • You can add extra water or milk to make the better as semi the inconsistency. The batter should be neither thick nor watery.
  • Heat a griddle or tawa or flat pan with butter or ghee.
  • Pour small ladle full of batter. Do not spread. If your tawa is big enough you can make two or three at a time.
  • Fry in medium flame for 2 minutes and flip.
  • Again cook the flipped side for not more than 2 minutes and the pancake will be ready to serve.
  • Serve hot with honey or maple syrup.

Notes

Tips/notes: 1. Adding vanilla essence and cinnamon powder gives and nice baked Aroma. 2. Addition of baking powder is optional to get fluffy pancakes. You can opt out if you do not like to add. 3. You can use oats powder also in place of wheat flour. 4. Replace sugar with brown sugar or jaggery powder or honey to make it healthy. 5. You can make thin crepes(or dosas) with the same batter by spreading the batter with ladle. 6. Since I used small country eggs, I added two of them. If you get big variety of eggs, one is enough for the given measurements.
