Cabbage egg masala | Cabbage masala with eggs
A simple and quick masala side dish prepared from cabbage with eggs and served as a side dish for rice, dosa, and chapati.
This cabbage masala with eggs is a fusion dish where we make a simple cabbage curry as usual and finally mixed with scrambled eggs. Those who don’t feel interesting to eat cabbage alone can enjoy this cabbage egg masala.
As you may know, cabbage holds a strong raw smell even after cooked, which most people don’t like. To overcome that flavor, we add garam masala and fennel powder.
My hubby and son like eggs a lot, hence add eggs with anything and everything, I can sell any veggie for the day 😉

Cabbage is a low-calorie vegetable that is rich in vitamins and minerals. In addition, cabbage is high in fiber and contains powerful antioxidants, including polyphenols and sulfur compounds.
Antioxidants protect the body from damage caused by free radicals. Free radicals are molecules that have an odd number of electrons, making them unstable. When their levels become too high, they can damage your cells.
It contains insoluble fiber, which keeps the digestive system healthy by providing fuel for friendly bacteria and promoting regular bowel movements.
Potassium helps keep blood pressure within a healthy range. Increasing your intake of potassium-rich foods like cabbage may help lower high blood pressure levels.

Cabbage egg masala | Cabbage masala with eggs
Ingredients
Ingredients:
- 1 small cabbage
- 2 eggs
- 2 tbsp oil
- 2 cloves
- 1 inch cinnamon stick
- ½ tsp fennel seeds
- 1 big onion
- 1 green chilli
- Few curry leaves
- 1 tsp ginger garlic paste
- 2 tomatoes
- ¼ cup water approx..
- 1 tsp salt
- ¼ tsp turmeric powder
- ¾ tsp chilli powder
- ¼ tsp fennel powder
- ¼ tsp garam masala
- ½ tsp pepper powder
Instructions
Preparation:
- Fine chop cabbage, wash and keep aside.
- Chop onions and tomatoes.
- Prepare ginger garlic paste.
Recipe to make cabbage egg masala:
- Heat oil in a pan, season with cinnamon, cloves and fennel seeds.
- Add chopped onions and saute well until they become soft.
- Then add green chilli and curry leaves and fry with onions.
- Put ginger garlic paste and saute well until raw flavor completely goes off.
- Also, put chopped tomatoes and cook until soft
- Now add required salt for the masala and chilli powder. Mix well.
- Add chopped cabbage and mix with the spices.
- Pour a quarter cup of water, cover and cook the cabbage for five minutes.
- After cabbage absorbs all the water and becomes softly cooked, add two or three eggs into the pan and beat the whites & yolk.
- Mix with the cabbage masala and cook by stirring continuously.
- Eggs will get cooked in just two minutes.
- Finally add some garam masala, fennel powder, and pepper powder.
- You can garnish with coriander leaves.
- Serve with plain rice, sambar rice or curd rice. Goes well with chapati and dosa also.

Tips:
1) Fine chop cabbage to get a nice look.
2) If you don’t like to add eggs, just skip them and proceed with plain cabbage masala.
3) I used only two eggs. Egg lovers can increase the number of eggs as your wish.
