Chicken zinger burger in KFC style with stepwise pictures and a detailed video. Zinger burger is one of the most famous burgers among fast-food lovers next to pizza. Every time when we visit shopping malls, we cannot resist the exotic smell of fried chicken from kfc and mc Donald outlets.

I got introduced to kfc after my marriage by B and yes it was love at first bite ????and eventually, we all became fans of their fried chicken and burgers. I tried many times at home to bring that magic taste of chicken zinger burger and finally settled with this recipe after lots of research, trial and error. At last, can say this is a foolproof recipe to bring 99% of that same taste providing all ingredients and steps followed.

Brining the chicken is important to get the correct texture of outside crispy and inside juicy fried chicken. Brining is nothing but marination for long hours in dry or liquid ingredients. Do not skip this brining procedure as this gives the tenderness to meat. Try to marinate minimum for 1 or two hours, else the fried chicken will be hard inside the burger.

This recipe needs few special ingredients for brining the chicken to achieve the exact taste. Also, I have mentioned alternate ingredients if you are not able to get those special items in your place. No worries still we can get the same taste.

Ingredients
  

Ingredients:

  • Chicken breast boneless slices - 4

To prepare brine(marination):

  • 1 tsp ginger garlic paste
  • ½ tsp mustard powder
  • ¼ tsp cinnamon powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 3 tsp soya sauce
  • 1/4 cup water
  • ½ tsp sugar
  • ½ tsp chilli powder
  • ½ tsp salt
  • ¼ tsp pepper powder

To prepare flour coating:

  • 2 tbsp corn flour
  • 1 tbsp all-purpose flour/maida
  • ½ tsp salt
  • ¼ tsp chilli powder
  • ¼ tsp pepper powder

To prepare dry crisp coating:

  • 1 cup plain corn flakes
  • 1 cup breadcrumbs

To fry:

  • Flavorless oil(sunflower oil –enough to deep fry)

To make burger:

  • 4 Burger buns
  • 4-8 lettuce leaves
  • 4 tbsp mayonnaise
  • 4 tsp tomato ketchup

Alternate ingredients:

  • If you are not able to collect the above mentioned special ingredients no worries, just use the following items instead of the above given:
  • Mustard powder – dry grind 1 tsp of mustard seeds kadugu along with little turmeric powder
  • Cinnamon powder- dry grind cinnamon stick or just you can omit this ingredient.
  • Garlic powder – Use a tsp of garlic juice prepared by crushing/grinding and filtering fresh garlic pods.
  • Onion powder – Use a tsp of onion juice prepared by crushing/grinding and filtering fresh onion.
  • Corn flour – use rice flour
  • Breadcrumbs – dry grind leftover/dried breads into powder.
  • Lettuce leaves – you can skip this if you don’t want.
  • Mayonnaise – Mayo gives the authentic taste of kfc burger. If you can’t get this in your place just manage with ketchup/tomato sauce on both the side spreads.
  • I have used plain mayo here. If you like kfc special mayo just mix mayonnaise with little ketchup chilli powder/sauce and oregano leaves and use as spread.

Instructions
 

Recipe to make chicken zinger burger:

    Marination/brining:

    • In a big bowl add ginger garlic paste.
    • Add all powders one by one, mustard powder, garlic powder, onion powder and cinnamon powder. Refer alternate ingredients list if you don’t have these items.
    • Mix soya sauce. Add water.
    • Mix everything together.
    • Add sugar.
    • Add chilli powder, salt and pepper powder. Mix well.
    • Our brine solution/marination is ready.
    • Soak the chicken breast boneless slices (cut slices to match bun size) into the liquid and coat well. Leave the marination aside for two hours.

    Flour coating:

    • In a separate bowl, mix corn flour and all-purpose flour/maida.
    • Add chilli powder, pepper and salt.
    • Dry mix everything together, and keep aside.

    Egg dip:

    • Beat two eggs separately in a bowl and keep aside.

    Dry coating:

    • Give a quick grind to plain cornflakes and breadcrumbs. Do not grind into fine powder. The texture should be more of grainy.
    • Use crush mode in a mixie or just put the corn flakes inside a clean dry plastic cover and roll few times with a roti rolling pin. And mix with bread crumbs (Refer alternate ingredients section to make this).
    • Spread this dry coating in a broad plate and keep ready.

    How to fry the chicken slices:

    • In a broad pan, heat enough oil to deep fry the chicken slices.
    • Keep the bowls and plates in order such that, first marination bowl, second flour coating mix bowl, third egg dip bowl and at last dry coating plate. If you keep them in this order it is easy to fry.
    • When the oil is hot enough to fry, reduce the flame to medium.
    • Use a stainless steel tong as shown in picture to lift a marinated piece and first dip it into the dry flour coating on both sides.
    • Next lift it and dip into egg batter quickly.
    • And next put it in the dry coat spread. Apply the corn bread mix coat gently on both the sides of the chicken. The coat should stick evenly on all the side.
    • You can gently tap out the extra grains.
    • Now place in the medium hot oil gently and leave undisturbed for 2 to 3 mins.
    • You can see the chicken roasted at the bottom side to golden brown color. And smell the nice aroma.
    • Now flip carefully to the other side and fry for few minutes.
    • Fry both sides evenly to golden brown color as shown.
    • Strain and keep aside in a plate.

    How to assemble zinger burger:

    • Cut burger buns into halves as shown.
    • Toast them slightly in a tawa for a minute.
    • Apply mayonnaise on the toasted side of bottom piece of bun.
    • Apply tomato ketchup on the toasted side of top bun.
    • Now place the fried chicken slice on top of mayo bun.
    • Place lettuce leaves.
    • On top of it, place the top piece of burger.
    • Yummy KFC style chicken zinger burger is ready.

    Notes

    Tips/notes: 1) Be careful not to over roast the chicken. Chicken should be fried as crispy outside and soft tender one inside. 2) To achieve this correct texture, the oil must be hot but not over hot and while frying keep the stove in medium heat.
