Elote | Mexican style sweet corn
Elote is a Mexican street food, made with sweet corn boiled, roasted and dressed in mayonnaise, chilli powder, lemon, and salt.

When I looked for a different recipe with sweet corn instead of the usual plain boiled I came across this simple Mexican recipe. This is a popular street food originally prepared by roasting corns in high fire tandoori style and seasoned with spices.
The actual recipe to make Elote involves frying the raw corns in high fire and seasoned with mayo and spices. To simplify the process I have modified it a little bit and let’s see that in detail in the procedure.
You may have heard a few negative comments about this sweet corn versus the traditional corn, which we get in the countryside. Without any doubt, the country corn is healthier. At the same time, sweet corn is not as bad as one might think. Most of them are just myths. For instance, we think that “Eating corn will make us gain weight”. But one plain corn has about 100 calories similar to an apple and as it is loaded with fiber it actually helps to feel full for longer time. Hence it is very helpful for a weight control diet and hace this elote as your breakfast for a good start.
Besides helping with weight loss, the insoluble fiber in this sweet corn helps in digestion by feeding the good bacteria in our gut.
Another popular myth is corn has no health benefits but only loaded with carbs. And the fact is it is loaded with lutein and zeaxanthin, the two phytochemicals that promote healthy vision.
Last but not least, they have vitamin B, iron, potassium and a good amount of protein.

Elote | Mexican style sweet corn
Ingredients
Ingredients:
- 2 sweet corns
- 4 tbsp mayonnaise (any type, egg or eggless)
- 1 tsp chilli powder
- 1 tsp salt
- Tomato sauce/ketchup
- 1/2 lemon
- Water to cook
- 2 tbsp oil
Instructions
Recipe to make Elote:
- Boil sweet corns in a pressure cooker with enough water for 4 whistles until cooked completely.
- When the pressure drops drain out the water and let them cool down.
- Now insert a long skewer(tikka) stick in the middle body of the boiled corn as shown in the picture. If you don't have skewer sticks never mind, just ignore this step and proceed with the next. This stick helps to handle the hot corn easily.
- Place a Tawa on a stove and heat a tbsp of oil.
- Roast the boiled corns on the stove in medium flame for 2 minutes on each side. Rotate or flip them few times to roast all the sides evenly.
- Be careful not to burn too much as we have boiled them already.
- Remove from the stove. When the corn is warm enough to handle, apply a generous amount of mayonnaise on all the sides as shown in the picture.
- Sprinkle chilli powder and salt as per your taste preference.
- Drizzle with tomato sauce.
- Serve this kids favorite delicious Elote - Mexican sweet corn.

Recipe to make Elote:

Notes:
- Boil corn completely and drain out the extra water fully.
- You can use any kind of Mayonnaise for this recipe.
- Use salt carefully because mayo and sauce both have salt in it.
