Kerala Egg roast | Nadan Mutta roast | Spicy Egg fry

Kerala egg roast is a spicy egg fry prepared with boiled eggs and onion tomato masala. Serve Nadan mutta roast with soft dosa or appam.

The first time I tasted this delicious egg roast was during a road trip to Munnar. We had it with soft coconut appam and it was delicious. It is a super easy recipe, quick too comparatively. Just boil the eggs in advance and you are done in no time. Moreover, this is a perfect travel box item with soft chapatis or phulkas. It can stay good for a full day. Since it is basically an onion-tomato spicy masala thokku base, you can make the thokku separately and store it in an airtight box in the refrigerator for days. When in hurry, just give a quick stir on the stove with boiled eggs to make or pack a delicious lunch or dinner.

Kerala egg roast – Serving suggestions

There are plenty of options available to serve this spicy egg fry in Indian cuisine. My kids’ fav lunch box choice is poori with this spicy egg fry. Though unusual it is indeed awesome you may want to try.

You can pair this muttai roast with appam, Kal dosa, uthappam, Ghee rice, plain rice, Veg pulav, Kuska, roti, phulka, Bisibelebath, and rasam rice. Not a bad choice with toasted bread too.

Tips to get the perfect mutta roast:

1) Hard boiling eggs(atleast 20mins) is a necessary step to make this dish. The soft-boiled yolk may become messy while frying.

2) To get a proper thokku consistency sautéing onions to the deep brown stage and cooking tomatoes well are important steps. Spending minimum 5mins for each is essential. In addition, saute well while adding ginger garlic paste to remove the raw flavor. Cooking each ingredient well in each step and final simmering will yield the perfect textured Egg roast.

3) Mix the half-cut boiled eggs gently with the masala to avoid removing yolk and white messy mix.

Preparation:

  • Hard boil 4 eggs, remove the shell and cut them into half, keep aside.

  • Chop the onions finely and I suggest using red onions. I used white since I didn’t have red onions at that time.

Recipe for Mutta roast:

  • Heat 3tbsp of oil in a pan, season with cinnamon, 1/2 tsp fennel seeds, and 1/2 tsp cumin seeds.

  • When the seeds splutter, add onions and saute well for 5mins until onions become soft and brown.
  • Add 1 tbsp of chopped green chillies and fresh curry leaves.

  • Next, add a tsp of ginger garlic paste and saute nicely to remove the raw smell of garlic. Add a cup of chopped tomatoes and cook till the tomatoes are soft.

  • Add 1/2 tsp turmeric powder, 1 tsp of chilli powder, 3/4 tsp coriander powder and 1/2 tsp of garam masala.

  • Now add the salt needed for the masala. Also, put 1/2 tsp of pepper powder and mix. Saute masalas for a few seconds and add a half cup of water. Cook a minute.

  • Next, add the boiled half cut eggs with a lavish amount of fresh coriander leaves.

  • Mix gently without breaking the eggs. Cover with a lid and let the Nadan egg roast simmer for 5 minutes until the masala releases oil.

  • Switch off and serve the egg roast with dosa, plain rice, or chapati.
