Recipe to make Omapodi mixture | Plain sev mixture:
Preparing Omapodi dough:
- In a big bowl take besan flour, ajwain seeds, chilli powder, hing, salt and ghee.
- Mix everything together by adding some water and make dough. I used half cup of water. Dough’s consistency should be neither hard nor soft (sticky) and should be like chapatti dough.
- Apply some oil inside the murukku maker and fix the Omapodi (large idiyappam) design and keep it ready.
Recipe to prepare Omapodi mixture:
- Heat oil for deep frying.
- Check the heat by dropping one small ball of dough inside oil. If it rises immediately then oil is in correct heat.
- Fill the sev press with dough and fix it.
- Press the dough inside oil carefully in circular motion. Do not over load.
- Leave undisturbed for few minutes. Once the sizzling sound stopped flip to other side carefully.
- Fry for few more minutes until golden brown color achieved.
- Break and store simple Omapodi in an airtight container.
- In the same oil fry raw dried peanuts until golden brown. It takes 3 to 5 minutes to fry one batch of groundnuts. Stir occasionally.
- Fry peanuts batch by batch.
- At last fry few curry leaves.
- Mix Omapodi and fried peanut with curry leaves together.
