Beans paruppu usili is a delicious South Indian stir-fry vegetable with dal recipe, made with gram dal, and served as a side dish with tamarind-based gravy items.
First of all, this paruppu usili is an excellent tasting vegetable recipe that you can prepare in just 15 mins. Few prep works needed like cooking beans and soaking gram dal for 30mins.
Vegetables to use in usili:
Bet suitable veggies are beans, flat beans(Avarai), Snake gourd(pudalai), cluster beans(kothavarai), cabbage, and banana flower(vazhaipoo).
Serving suggestions: Serve this mild paruppu usili with hot rice and tamarind based gravies like
Vendhaya kulambu, etc.
Also, you can serve paruppusili with a variety of rice items like
Tomato rice and Tamarind rice too.

Paruppu usili | Beans paruppu usili recipe
Ingredients
Ingredients:
- 2 cups Beans (chopped)
- 1 cup gram dal (soaked)
- 2 tbsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 onion
- 1 sprig curry leaves
- 6-8 red chillies
- ¼ tsp asafoetida
- ¼ tsp turmeric powder
- Water to cook
- 1½ tsp salt (as per taste)
Instructions
Preparation:
- Clean and chop Beans.
- Soak gram dal for 30mins.
- Cut onions and keep aside.
- Pressure cook the vegetable with a half cup of water. Use a small, right-sized cooker. One whistle is enough to cook Beans. Alternately, you can cook beans for less than five minutes in a pan with very less water.
- Next, take a blender/mixer and add soaked dal without water, red chillies and salt.
- Coarse grind the ingredients. Just give a pulse grind as it's important to not make it a paste.
- Steam the ground gram dal mixture for around 6 minutes in a steamer or idli cooker.
Recipe for making paruppu usili:
- Now heat oil in a pan, season with mustard and cumin seeds.
- Add onions, curry leaves and saute well until they become soft.
- Also, add a few red chillies to suit your needs.
- Now put the steamed dal mixture and saute well in oil for five minutes.
- Fry the dal in the oil until you get a nice aroma and add cooked beans.
- Add turmeric powder and salt.
- Mix everything together for two minutes.
- Switch off the beans paruppu usili and serve as a side dish with any tamarind based gravy.

Tips:
1) If you prefer the authentic onion-free paruppu usili, just skip onions and proceed with the rest of the recipe.
2) Saute the cooked dal well in oil to get the roasted effect.
3) Finally, adjust the number of red chillies as per your spice needs.
