Potato fry is very easy and quick side dish served along with sambhar rice, curd rice, all types of variety rice, roti and dosa. Aloo fry can be prepared in multiple ways in different cuisines all over India.
Today I made this quick dish in south Indian style. Since I am posting this under quick recipes/fries I used spice powders to prepare this potato fry. To add extra flavor and crispness we can add special masala powder to sprinkle on top of it. That version of potato fry I will post very soon.
This potato fry tastes great when served along with hot steamed rice and any tamarind based gravy. Apart from this simple potato fry I also make potato podimas, potato sabzi, potato pepper fry and potato kurma. Very soon I will post these one by one. Let us see this potato fry recipe with step wise pictures and explanations.

Ingredients
Ingredients:
- Potato – 4 medium size
- Curry leaves – few
- Mustard seeds – ½ tsp
- Cumin/jeera seeds - ½ tsp
- Turmeric powder – ½ tsp
- Chilli powder – 1 tsp
- Gram/chana dal – 1 tsp
- Split urad dal – 1 tsp
- Hing/Asafoetida – ¼ tsp
- Salt – ½ tsp or as required
- Oil – 1tbsp
Instructions
Preparation:
- Peel potato and chop finely.
- Soak them in water to remove extra starch and to prevent oxidation.
Recipe to make potato fry:
- Heat a wide shallow pan or tawa. Add oil.
- When oil becomes hot add mustard and jeera seeds. Let them splutter.
- Add gram and urad dal. Fry them in medium flame until nicely roasted to golden brown color. Be careful not to over fry them.
- Add washed curry leaves.
- Keep the flame in sim mode and add spice powders one by one with salt.
- Mix the powders quickly and add chopped potatoes.
- Mix the powers evenly to coat on to the potato pieces.
- Increase the flame to medium level. Let aloo pieces roast slowly.
- No need to add water. You can add a teaspoon of oil from around the corners of the pan if needed.
- Mix and flip the pieces in between few times. You can see the roasted texture when flipping.
- The pieces are chopped finely thus will be roasted quickly. Check one piece after ten minutes, you can see outside crispy inside softly cooked texture.
- Switch off the stove and serve with rice, chapatti or dosa.

Tips/notes:
- If you like to make this fry quickly chop potato finely.
- Adjust the spice level according to taste. Sprinkle pepper powder if you like at last and give a quick mix. In case of adding pepper reduce chilli powder.
- Adding curry leaves and hing gives nice aroma for this south Indian style fry.
