Simple veg pulao in cooker | Veg pulao with milk | One pot pulao
Simple veg pulao is a rice recipe made with easy vegetables in just 15 mins using a pressure cooker.
This is an easy and quick veg pulao which uses just plain milk for extra taste hence no fuss of extracting coconut milk. But vegans can prepare the same pulao with coconut milk.
As I make this one-pot pulao often for my kids’ lunch box in busy mornings, I prefer skipping fancy ingredients like coconut milk, mint leaves and etc. Which are essential for an authentic pulao.
My kids like this simple pulao plain and without much of garam masala smell, I avoid adding whole spices like cardamom, cloves, and other spices. But if you prefer spice smell you can start with these spices before adding onions.
Serve this simple veg pulao with any kind of North Indian gravy like paneer butter masala, matar paneer, paneer tikka, dal or simply with a pickle. Preferably paneer tikka goes very well with this one-pot pulao or cooker pulav.

Ingredients
Ingredients:
- 1 cup basmati rice
- 1 tbsp ghee
- 2 tsp oil
- 1 cinnamon optional
- 1 cardamom optional
- 1 big onion
- 2 green chillies
- 4 cashews
- 6 beans
- 1 carrot
- 10 cauliflower florets
- 2 tbsp green peas
- 50 g paneer optional
- 1 tsp ginger garlic paste
- 1 cup water
- 1 cup milk
- 1 tsp salt
Instructions
Preparation:
- Wash and soak basmati rice for 20mins.
- Chop the vegetables and paneer into same sized cubes.
- Keep boiled milk ready at room temperature.
- If you don't have ginger garlic paste readily available, crush 4 garlic pods along with an inch of a ginger piece and keep aside.
- Slice onions and green chillies.
Recipe to make simple veg pulav:
- Heat oil a pan and fry paneer cubes and keep aside if using.
- In a pressure cooker, heat some ghee, fry some onion slices to deep brown color, collect and keep separately for garnishing. Skip this step if you don't need garnishing.
- Now in the same cooker, heat ghee, add onions and saute until they become soft.
- Slit green chillies and add with onions.
- Put the chopped veggies and mix.
- Add ginger garlic paste and saute well with the vegetables.
- Pour one cup of water plus one cup of milk. For one cup basmati rice, add 1:1 ratio of water and milk.
- You can now add the required salt for the pulao. Also, put a pinch of garam masala powder at this stage if you like.
- When the liquid starts boiling, add soaked and drained basmati rice and mix well.
- Pressure cook for not more than 2 whistles.
- Let the pressure drop naturally, and open the cooker, mix the fried paneer cubes.
- Finally before serving to sprinkle the browned onions on top of the pulao.
- Serve hot.

Tips:
1) For extra rich taste and vegan options, replace milk with coconut milk.
2) Instead of paneer, you can use soaked soya chunks.
3) Use biryani spices and mint leaves while sautéing onions, if you prefer more flavor full veg pulav.
4) Don’t use more of garam masala or pulav masala powder as these may turn the color of the pulao into darker and tastes slightly bitter.
