Chicken noodles | How to make Chinese Chicken noodles recipe

First of all, many of us get confused with chowmein and noodles when looking at a Chinese menu. As far as I know, both are noodles usually made of wheat flour where chowmein is fried one and noodles are boiled one. Though chowmein seems attractive, noodles are the most widely used traditional recipe around the world. In many places, both chowmein and noodles are the same and the words are used mutually.

Of all Chinese recipes noodles always hold a special place in my kitchen because my kids love noodles. I love to try a variety of noodles recipes, regardless of which cuisine it is from like Indo-Chinese, purely Chinese, or type like wheat noodles, egg noodles, Japanese rice noodles, millet noodles, purely Indian sauce noodles and so. It is completely our personal preference and imagination. Let’s see my way of Chinese chicken chowmein today.

Restaurant-style Indo-Chinese Chicken noodles:

If you have wondered ever why we could not get the authentic restaurant taste in our kitchen recipes, the answer is the special Chinese wine. In restaurants regardless of veg or non-veg Chinese recipes, they use a teaspoon of this special wine along with vinegar, oyster sauce to get their traditional taste. At home, we can achieve ninety percentage of the special taste without these or with alternate ingredients.

Chicken noodles

As a special mention, I would emphasize that cooking noodles perfectly(no undercooked no mushy) is the main thing to do in any kind of noodles recipe.

Because there are a variety of noodles available like wheat flour noodles, rice flour noodles, millet noodles, egg noodles and many more. I chose whole-grain wheat noodles today to make this chicken chowmein. Feel free to choose your favorite variety and brand and stick to the instructions of the manufacturer.

Always keep an eye on the noodles pot, switch off when done and drain out the water immediately. Keep the cooked noodles aside to cool down on a plate. You can even do a quick cold water wash and keep aside the cooked noodles to avoid overcooking and sticky noodles. Smear them with a tsp of oil.

Ingredients
  

Ingredients:

    To cook noodles:

    • 3 noodles cakes to serve 4
    • 2 tsp oil
    • ¾ tsp salt
    • 1 ½ lit water approx.

    To make sauce:

    • 1 tbsp corn starch
    • 4 tbsp water
    • 1 tsp chilli sauce
    • ½ tsp soya sauce
    • ¼ tsp sugar
    • ¾ tsp salt
    • ¾ tsp pepper powder
    • ½ tsp lemon juice
    • 1 tsp sesame oil

    Other ingredients:

    • 200 g boneless chicken
    • 4 tbsp sesame oil
    • 1 inch ginger
    • 4 garlic pods
    • ½ cup onion
    • ½ cup carrot
    • ½ cup beans
    • 1 cup cabbage
    • ¼ cup capsicum
    • ½ cup green onions

    Instructions
     

    Preparation:

    • Chop all the vegetables including onion, garlic and ginger in julienne type (lengthwise) cut.
    • Cut cabbage as lengthy strands and keep aside.

    Recipe:

      How to make the Chinese base sauce:

      • In a bowl, take corn starch, add some water and make a thin paste.
      • Add chilli sauce, soya sauce, Oyster sauce(optional if you have. I didn’t add), brown sugar and salt.
      • Also, add pepper powder and vinegar or lime juice with some sesame oil and mix.
      • Keep this sauce mix ready.

      How to cook noodles:

      • Boil lots of water up to roll boiling stage and add oil, salt.
      • Add the noodles cake and cook until soft. Basically you have to follow the instructions given in your noodles packet. Cook, drain water and keep aside in a flat plate to cool down.

      How to make chicken chowmein:

      • Take a large wok or pan and heat sesame oil. Keep the heat source on high mode during the whole cooking.
      • Saute ginger and garlic pieces.
      • Add onion, carrot, beans, and capsicum.
      • Put cabbage strands and saute everything for two minutes in high heat.
      • Now add chicken pieces and keep stirring until the chicken cooked well. You can see the chicken become white in color.
      • Now add the sauce mix and stir with the veggies and chicken.
      • At this stage, you can add salt and pepper powder if you wish spicier. Remember we added salt while cooking the noodles.
      • Mix noodles gently with forks or ladle with the sauce base. Try to do without breaking the noodles.
      • Switch off immediately and serve hot.

      Tips:
      1) First of all, stick to the instructions in the noodles packet to cook your noodles. Also, remember at any stage overcooking the noodles will yield sticky noodles which will alter the original taste and texture.
      2) Also, you can use red chilli flakes in places of chilli sauce. I don't find any difference in taste when using chilli flakes. But Indian chilli powder won't work out definitely.
      3) Don't skip cabbage and green onions as they are the main veggies in Chinese noodles.
      4) Finally, you can increase or decrease the sauce based on your liking.
