Egg bhurji | How to make Anda bhurji | Indian scrambled eggs
Egg bhurji or And bhurji is a North Indian style of egg fry, cooked by stir-frying eggs along with onion, tomato and flavorful spices. Learn how to make this tasty egg bhurji and serve with chapati.
This is a super quick recipe as it takes just ten minutes to saute and cook everything. Hence bachelors can even make this easy egg burji with easily available ingredients.

Ingredients
Ingredients:
- 5 eggs
- 3 tbsp oil
- ½ tsp cumin seeds
- 1 big onion
- ½ green capsicum
- 2 green chillies
- 1 tomato
- ¾ salt
- ½ tsp black pepper powder
- ¼ tsp garam masala
- Coriander leaves
Instructions
Preparation:
- Beat five large eggs and keep aside.
- Chop onion, tomato, capsicum and green chillies.
Recipe to make egg bhurji:
- Heat oil in a pan, add cumin seeds.
- Let the cumin splutter and add chopped onions.
- Saute onions for two minutes until they become transparent.
- Add capsicum and green chillies. If making for kids instead of chopped green chillies use slit chillies.
- Put chopped tomato and cook until they become soft.
- Add required salt for the bhurji at this stage as salt helps to cook the tomatoes faster.
- Pour the beaten eggs and stir quickly.
- Continue to stir and cook the eggs to avoid sticking to the bottom.
- As you may know, eggs get cooked faster and so you have to stir continuously for five minutes in medium flame.
- In around 5 to 7 minutes the eggs become curdled and leaving the pan.
- Scrap the sides and mix well. Break the big lumps into small parts by using the ladle.
- Now add chilli powder, black pepper powder and garam masala.
- Mix the eggs with the masala powders for two minutes and switch off.
- Serve with roti, chapati and paratha.

Tips:
1) First of all, beat the eggs properly before stir-frying. Because if not beaten up, egg whites and yolks get fried separately.
2) Moreover, you can avoid using capsicum if you don’t like.
3) Moreover, I didn’t use ginger garlic paste as I like it that way. If you prefer you can add half tsp of it after sauteing onions.
4) Also, add a dash of lemon juice at last if you wish to.
